Vegetable pizza (2 persons)
Preparation time: 50 minutes + 40 minutes to rice
250 g buckwheat flower or rice flour
½ tsp. salt
½ bag of yeast granules
1 tbsp. sugar
2-3 tbsp. olive oil
150 ml water (lukewarm)
2 tbsp. olive oil
1 can of chopped tomatoes
½ tsp. oregano
100 g grated cheese
2 slices of ham, in strips
3 tomatoes, in slices
1 zucchini, in slices
1 yellow bell pepper, in pieces
1. For this recipe you can use buckwheat flour or rice flour. The rice flour is more grainy, so it cannot be used for a calzone pizza. The buckwheat flour bottom has a predominant taste, it is clearly present. Both of these bottoms are thin, the flower can be varied according to the taste.
2. Mix the flour and the salt in a mixing bowl, make a well in the middle. Sprinkle the yeast and the sugar into the well. Pour the oil and water (lukewarm, up to 40 degrees) into the well and mix it together. You can do this with your hands or with a mixer. If you do it by hand it can feel a little rough, like sand. This is because of the flour, but it is normal. Mix it until it is a cohesive mass. The dough will not be as pretty as when you use normal dough, but it is tasty and good looking at the end.
3. Take the dough from the bowl and knead it on a floured surface. The kneading is less important than if you use normal flour, because the flour we use is gluten-free, so you don’t have to stimulate the gluten. Knead until it is a cohesive dough.
4. Make a ball by the dough, place it in a clean bowl and leave it covered with a cloth or plastic wrap for about 30-40 minutes to rise in a warm place.
5. In the meantime, make the pizza sauce. Heat the oil in a saucepan and add the can of tomatoes (including the juice).
6. Add the herbs and bring it to the boil. Let the sauce simmer on a low heat, uncovered, until the sauce is thick and fragrant, for about 20 minutes. Season with salt and pepper.
7. Preheat the oven to its highest temperature possible (if it is possible 275˚C, but 200˚C is also enough) and cover a baking tray with greaseproof paper.
8. Roll the dough with a rolling pin on a with flour covered surface until the dough is flat and round. The rolling pin will nog work very well for the dough with the rice flour, you can use your hands to push the dough until it is flat. Don’t worry if the dough is a little uneven.
9. Place the dough on the baking tray. It is possible that the dough is falling apart if you move it. That is why it is convenient to roll the dough on the baking tray. Make the edges thicker, so the sauce is not dripping of. Spread the sauce over the pizza and sprinkle with oregano and 50 grams of grated cheese.
10. Divide consecutively the filling; ham, tomatoes, zucchini and the bell pepper. Sprinkle some oregano and grated cheese again.
11. Bake the pizza’s at the centre of the oven fora bout 10-15 minutes. When your oven is colder, it takes longer.
Of course, the filling can be varied according to personal taste and preference.
Tip: For four people, it is convenient to make two pizza’s.
